NEW HARTFORD — Grey Area Tavern opened on Monday, June 29 at the former long time location of Portobellos Restaurant, 107 Main Street.
The restaurant was opened by Paul Monroe who has been in the restaurant field for over 22 years.
Monroe grew up in Torrington but moved away when he turned 18 years old.
“I’ve worked all over New England, and I’ve worked in places from dive bars to tavern-style restaurants, to fine dining restaurants,” Monroe said in an interview with The Winsted Phoenix. “It’s quite an eclectic group of restaurants I’ve worked in. I decided to start my restaurant because it’s always been a dream of mine. I’ve traveled around seeing and I’ve had many experiences.”
As for the name “Grey Area Tavern,” Monroe said the name came from wisdom learned when he first started in the restaurant field.
“When I started with my first bartending job, I worked alongside the owner,” Monroe said. “One time, he handled a situation with a guest in a certain way. The next day, I had a similar situation. I handled it just like the owner did, but it didn’t work out as well. I asked him ‘What did I do wrong here?’ He told me ‘Well, in bars and restaurants, there are a lot of grey areas. There is nothing that is in black and white.’ The more I thought about it, the more I understood that everything is situational when it comes to a restaurant. If you keep yourself open to a grey area, it allows you to be flexible and accommodate the best experiences for the individual, not just a group.”
He said that the core foundation for Grey Area Tavern is comfort food, but Monroe said the restaurant goes beyond traditional tavern offerings.
Grey Area Tavern offers a selection of specialty burgers, sandwiches, pasta meals, and salads, all created in collaboration with head chef Josh Chandler.
“Josh is not your usual chef because he is very modest but creative and innovative,” Monroe said. “He’s been in the restaurant industry as long as I have. I look forward to creating Grey Area Tavern with him.”
Grey Area Tavern is currently open Mondays and Wednesdays from 3:30 p.m. to 9:30 p.m., Thursdays, Fridays, and Saturdays from 3:30 p.m. to 10 p.m., and Sundays 3:30 p.m. to 9 p.m.
